| ACTIVITIES |
The department
of Catering Science and Hotel Management conducts
Food Festivals regularly, named . Through the food festival, the talents and skills of the students are exposed to the hoteliers. The highlight of the Food Festival is that the preparation and service of food is done entirely by the students and faculty and no chefs are brought from outside to prepare the food. This helps the hoteliers to assess the quality of the students and this in turn facilitates their recruitment for industrial training and placement. |
| Karpagam Food Processing Training Centre
|
Funded by Ministry of Food Processing Industries, New Delhi. The beneficiaries of the training programme are the poorest of the poor rural women. These women form groups called “Self Help Groups” having minimum savings. They are given training in preparation of pickles, jams, chips, leaf cup making, pappads and also simple chemicals. This training helps them to become self employed. |
| Need
based subjects |
The Catering
students are offered ””French” as
second language which enables them to understand
and deal with ease, the French terminologies used
in Food and Beverage Production and Service in star
hotels throughout the world.
The catering students are required to deal with guests directly, so communication
skill is a very essential requisite for them. To train them to acquire this skill
core papers on “Communicative Skills” and “Soft Skills” have
been included in the curriculum.
|
| Additional Enrichmnet |
There is a demand in the Catering Industry in the area of bakery and confectionery, but there is no indepth study of the same in the curriculum. So an additional course on “Bakery and Confectionery” has been introduced. |
